Summertime BBQ Bundles

When you have multiple mouths to feed, there will be no one mix of ingredients that’ll satisfy everything. So when you’re making a summertime meal and have access to decently large grill, it’s easy to just prep ingredients and let everyone choose their own mix. It’s also really easy way to cook.

This was in the summer of 2017, but it’s too good to miss. So here’s a whiff from the past in the form of a complete summer meal from last summer.

Ingredients

  1. sweet potatoes

  2. zucchini

  3. carrots

  4. onions

  5. spring onions and/or leek

  6. bbq sausages

  7. smoked ham

  8. over-cooked pork back or side

  9. bell peppers

  10. oil

  11. butter

  12. salt

  13. pepper

  14. chili flakes

I had many mouths to feed, so obviously just get enough ingredients to your requirements.

Wash and peel zucchini, carrots, onions and sweet potatoes. Chop everything to quite large (half an inch or so) cubes. Except bell peppers and spring onions, of course. They are fine in smaller strips and/or rings.

Put each ingredients into its own small bowl for easier pickings.

When you’re making the bundles, take a square of aluminium foil, about 20 cm by 20 cm. (But about 1 ft by 1 ft is also fine, it’ll just make a quite large bundle.) Spread the foil on the table, and put the ingredients you want into the middle of it. Then lift up from corners and crumble into a small bowl-like shape. Pour 1 tsp of oil and/or add 1 tsp of butter to the bowl. Season with salt and pepper and with pinch of chili flakes if you wish. Don’t try to include every ingredient in every bundle, the point is to have different combinations. Finally twist the top together to form a pear or onion shaped bundle. Collect several ready bundles and take them to the grill / barbecue, whatever you want to call it.

Keep the grill on low to medium heat as to not burn the bottoms of the bundles before they’re done throughout. If you don’t have heavy aluminum foil where you live, layer two foils on top and use a double-layer foil as the bundle. Cook the bundles for 15 to 20 minutes. You can try gently opening the twisted top to look into them and see when they’re done. I don’t recommend this though as it’ll somewhat spoil the flavors and lets out steam.

Making a complete meal out of the bundles

  1. The bundles themselves

  2. cucumber

  3. tomatoes

  4. cauliflower

  5. potatoes

My grill had a side burner on it, so I boiled potatoes on the side while the bundles grilled inside. Also made sure we had fresh veggies on the side to add texture and flavor and bring something cooler to the meal as it was a really hot day. I also grilled some bbq-pork.. things on the side since not everyone here was keen on veggies.

Make sure you have enough cold drinks, too much heat is dangerous!
