I mentioned earlier that I like using one ingredient, but many variants? Did I also mention that I adore onions. I’ve always loved them. Fried, boiled, baked, raw. Doesn’t matter, I’ll eat it if it’s onion. So naturally I had to make a separate dish out of them.
A little clarification might be in order here. Not every ingredient here is named “onion” in English, but in Finnish each of these is called onion in some way. Chives are “grass-onions”, Garlic is “white-onion”, Shallot is just “shallot-onion”. And I noticed later that not every ingredient managed its way to the picture, sorry about the shy ones 🙂
6 small shallots
1 red onion
1 yellow onion
1 sweet onion
3-4 gloves of garlic
2 spring onions
few pinches of chives (garnish on top, don’t use in mix)
2 tbsp oil
1 tbsp salt
2 tsp black pepper, ground
1 tbsp sugar
Basically just as many varieties of onion that you can find, about similar amount to each other (except I used less garlic because its flavor is overpowering otherwise).
Peel and wash everything. Make a fine diced (or even minced) mixture of everything.
Bring a large pan to heat, add couple of tablespoons of oil. Onions, in. Fry them until they are turning transparent. Add sugar, it helps the onions caramelize and bring out even more flavors. Season with salt and pepper. Keep seasoning simple, you don’t need to add anything more, as the onions themselves already contain so much flavor, don’t hide it. (Though if you have access to it, a pinch of organic, hand-made celery salt would be delicious.)
Fry until onions develop a caramelized brown edge and surface. Heat off. Serve with few pinches of chives as garnish on top. Eat as-is, or serve as a side or mix into other dishes. Or even use as a garnish for potato mash or something.
